Ingredients
½ pound semi-sweet chocolate
½ pound butter
3 eggs
¾? cup light brown sugar
2 tablespoons flour
¼ teaspoon salt
2 teaspoons vanilla extract
Instructions
1. Preheat oven to 325°F.
2. In a stainless steel bowl over a double boiler, melt chocolate and butter.
3. In a separate bowl combine sugar, flour and salt.
4. Slowly add eggs to the dry ingredients while stirring with whisk.
6. Add vanilla.
7. Incorporate chocolate/butter mixture slowly while stirring, mix until uniform.
8. Grease 8 ramekins (3" - 4" diameter ovenproof bowl). Fill about ¼ inch from the top.
9. Bake for 18 to 20 minutes. Centers should be soft and underbaked. (Bombes will soufflé a bit and just begin to crack and reveal their velvety, chocolaty centers.) Let rest for 5 minutes.
10. Remove from ramekins by gently running a knife around the edges to loosen. Place a plate on top and very carefully flip it upside down.
11. Serve warm.
Option: Drizzle with melted chocolate.
